    • Boil your red rice in a pot of boiling water 
    • Heat a pan and pour some olive oil into the pan 
    • Roast the vegetables with a little bit of salt  
    • Do not cook the vegetables just slightly roast them 
    • Boil overnight soaked kidney beans in a pressure cooker 
    • Mix the boiled red rice, kidney beans, and roasted vegetables in a bowl 
    • For the dressing, mix a little bit of olive oil with lemon juice and seasoning of your choice
    •  Mix the dressing with your salad 
    • Your salad is ready! 

     

    MAKE A RED RICE STUFFED PARANTHA 

     

    If you have leftover red rice, this is the perfect way to utilize them. Flavor your boiled red rice with seasoning or vegetables of your choice. Remember to not use vegetables like tomatoes as they have moisture and the paratha will not be able to hold its shape. Then, simply stuff the paranthas with the rice like any other stuffed paratha. Just like that, you can add more antioxidants, Vitamin B6, and other nutrients to your normal paratha.
